I cant remember where I found this. But I love Mangos, so I make it
It's delicious and perfect for a summer time lunch.
It's also low in fat and fairly filling. Hope you enjoy it.
Makes 2 servings or Lunch Salad For mango salad:
1 tablespoons packed dark brown sugar
1 tablespoons fresh lime juice
½ (4-inch-long) fresh hot red chile, thinly sliced, including seeds (optional)
1 medium shallot, thinly sliced
2 Tbl chopped fresh cilantro
1 tablespoons chopped fresh mint
1 firm-ripe mangoes, pitted, peeled, and thinly sliced
3-4 cups torn spring lettuce
1 oz Feta Cheese
For shrimp:
16 medium sized shrimp (1/2 lb), shelled and devained.
1 tablespoons vegetable oil
1 teaspoons ground cumin
1/2 teaspoon salt
Cayenne pepper
Accompaniment: lime wedges and Feta cheese if you like
Make mango salad:
Whisk together brown sugar and lime juice in a large bowl until sugar is dissolved, then whisk in red chile, shallot, cilantro, and mint. Add mangoes, tossing gently.
Prepare grill or heat a fry pan sprayed with cooking spray Whisk together oil, jalapeño, cumin, salt, and dash of cayenne pepper in a small bowl. Marinate shrimp for about 15-20 minutes. Place on skewers and Grill or Saute in fry pan until done. 3-5 min.
Place the torn lettuce in 2 salad bowls. Top with the Mango salad mixture and then the grilled shrimp and Feta.
